If you’re like us, you don’t really need a special excuse to splurge an entire paycheck on the deep, dark depths of Amazon’s amazing beauty department. But for one “holiday” per year, we go especially insane. Three words: Amazon Prime Day. Yep, the annual one-day shopping event is officially upon us, and we’re already shining our wallets and pep-talking our credit cards in anticipation.
For those who don’t know, Amazon Prime Day is basically the equivalent of Black Friday or Cyber Monday but held exclusively for Amazon Prime members. (Without a membership? Fear not! You can sign up now for a 30-day free trial to shop all deals.)
Shoppers are gifted with extra-special deals and markdowns across pretty much every category. So yes, go ahead and buy a blender, microwave, and vacuum while you have your credit card handy, but we, of course, have our beauty-loving hearts zoomed in on all the red-hot hair, makeup, and skincare deals we plan to stockpile our carts with. Prime Day deals start today, July 15, and will run through Tuesday, July 16—the event’s first-ever 48-hour run time. But aside from baby corgis, shark fin life vests, and floating corgi butts, can we talk about these bomb power bowls?
Sitting on a bed of farro, we have everyone’s favorite Korean beef made with crumbled ground beef (but you can substitute ground turkey or chicken if you prefer), caramelized kimchi, shredded cabbage, and avocado slices drizzled with my favorite Sriracha mayo.
If you have a lower tolerance for heat but love love Sriracha, I would add a little less, and add more, to taste.
You can even make this ahead of time and hold off on the avocado slices to make this the perfect meal prep for the entire week. That’s basically what I did for the last 2 weeks!
Korean Beef Power Bowls
Yield:4 servings

cook time:15 minutes
total time:45 minutes
With the easiest Korean beef, shredded cabbage, caramelized kimchi, avocado slices, and the best ever Sriracha mayo. SO SO BOMB.
1 avocado, halved, peeled, seeded and thinly sliced
2 green onions, thinly sliced
1/4 teaspoon sesame seeds
Directions:
FOR THE KOREAN BEEF: In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and Sriracha.
Heat olive oil in a large skillet over medium high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
Stir in soy sauce mixture until well combined, allowing to simmer until heated through, about 2 minutes; set aside.
FOR THE KIMCHI: Heat sesame oil in small skillet over medium high heat. Add kimchi and sugar, and cook, stirring constantly, until caramelized and heated through, about 3-5 minutes; set aside.
FOR THE SRIRACHA MAYONNAISE: In a small bowl, whisk together mayonnaise, Sriracha and lime juice; set aside.
FOR THE BOWLS: Cook farro according to package instructions; set aside.
Divide farro into bowls. Top with ground beef mixture, kimchi, cabbage and avocado, drizzled with Sriracha mayonnaise and garnished with green onions and sesame seeds, if desired.

Roush Performance has transformed pickups into menacing customs before, but the Michigan-based shop says its latest build is “the quickest production truck ever.”
The 2019 F-150 ‘Nitemare’ takes the title by way of a Ford 5.0-liter V8 that’s aspirated with a Roush supercharger.
That juiced-up power plant puts 650 horses on the pavement and will send the Nitemare to 60 mph in 3.9 seconds. Hell, that’s as quick as Aston Martin’s new Vantage AMR.
Roush also equipped an active exhaust system and custom 22-inch wheels, added a bespoke front bumper cover and a grille with accent lighting, and lowered the body for a sportier look.
With all of those mods, we’re not really sure that the F-150 Nitemare can be classified as a “production” model.
But for just $19,150 above the base model’s price, it’s definitely a badass and affordable option for a gearheads on a budget.
When will Timex get its due? Since the 1850s, the Connecticut-based watchmaker has been turning out consistently reliable timepieces that looked good and remained affordable.
They have, admittedly, released a ton of watches over the years, and filling the market like that might explain the brand’s everyday wear rep (which may be changing!)—but look at a watch like the beautifully utilitarian 45mm Allied Tide-Temp-Compass.
You might realize it’s just possible watch lovers, at least, kind of take Timex for granted.
